Cooking on a Japanese grill known as a Shichirin is an artistic way of barbecuing that refines small dishes with precision over extremely high heat most often obtained by using Binchotan charcoal which burns longer at a higher temperature and is more neutral than ordinary charcoal. However, good results are achieved also through grilling on Kamado or closed grill.
